Hot Sausage Chili

Cook and brown one pound of hot sausage (breakfast kind) with onion. Drain fat. Add crushed tomatoes (28 oz), 4 cans chili beans, 1 tbs cumin 1 tsp chili powder. Stir. Let simmer for 30 minutes and enjoy. Oh my it was so good.







My new favorite sound is the sound my jars make when they are sealing. I am making pickles today. My recipe is so very easy! I got it off cooks.com. Here's the recipe.

OVEN DILL PICKLES
BRINE:
12 c. water
4 c. white vinegar
1 tsp. salt
Dill
1 garlic clove
Pack pickles in jars. Bring brine to a boil in kettle. Pour hot brine over pickles. Seal jars. Place in oven at 250 degrees until pickles turn color. (Dull olive green, about 1 hour.)
Do not use iodine salt.

Now that the pickles are cooling. I'm making spaghetti squash. I hope both of these turn out. I cut my spaghetti squash in half and place them cut side down on a baking sheet. I used 2 whole spaghetti squash to feed my family of 5. I sprayed the sheet with olive oil and am baking them at 375* for 45-55 minutes (depends on size of squash). Once they are done I let them cool about 15 minutes and then used a fork to get all the good spaghetti strands out of the squash, keep the shell. While the squash is cooking I put on the stove a large (28 oz) can of crushed tomatoes, basil, italian seasoning, a pinch of sugar, and a hint of olive oil to simmer. When the squash is done and you've pulled the strands out toss them in the sauce and toss well then put them back in the shell add mozzerella and bake again another 15 minutes til cheese is bubbly and brown. Then serve. YUMMO! It was so good.

Next I roasted the seeds. You boil them for 10 minutes. Then drain and toss with oil. Spread on a cookie sheet and salt. Then bake for 30 minutes at 250*.

  1. Sounds great!! I love spagetti sqaush!! I can remember my parents making pickles when I was younger, but I haven't tried it yet! I'll be curoius to read how they came out!! Thanks for a fun post!
